Recipe: Bean Caviar (White Bean Spread)

White and fluffy, they even taste somewhat like fish roe.

My scale battery ran out and I couldn't weigh the beans, so I gave the quantity of beans measured with a cup (a milk mug).

Ingredients

2 cups cooked white beans
50ml oil
1/2 lemon
1/2 onion
salt, black pepper

How to prepare bean caviar (white bean spread)

  1. The night before, soak the beans. The next day, cook the beans in salted water with two bay leaves (change the water once if desired).
  2. Pass the cooked beans through a potato ricer (the advantage is that the skins don't pass through, so the paste will be very smooth). If you don't have this tool, mash the beans as you would for regular mashed beans. Add 50ml of the cooking water to keep the puree from being dry, and mix well.
  3. Add the oil in a thin stream, like making mayonnaise, stirring constantly.
  4. After finishing with the oil, do the same with the lemon juice. Taste and add more juice if you think it's necessary.
  5. Season with salt and ground black pepper.
  6. Add very finely chopped onion.
  7. Let it rest for half an hour, then you can serve.
