Recipe: Chicken with Caramelized Onion

I was inspired to prepare this dish by a Palestinian recipe called Musakhan. I didn't have all the ingredients available - for example, I was missing pine nuts, but I replaced them with za'atar and the combination turned out very good. I finally found sumac at Carrefour. I'll tell you right now that the best part is the slightly crispy pita bread, soaked in the juices of the chicken and caramelized onion.

Ingredients

800g chicken (I used 7 drumsticks)
2 tablespoons sumac
1/4 teaspoon turmeric
3 garlic cloves
50 ml olive oil + 3 tablespoons olive oil
3 onions
2 pita breads
2 teaspoons pine nuts (or za'atar)
salt, pepper

Servings: 2-3

How to prepare chicken with caramelized onion

  1. Cut the onions into thin rings. Heat 3 tablespoons of oil well and add the onions to the pan. Sprinkle salt and pepper over them. Reduce heat to low and fry the onions, stirring occasionally, until they turn golden. This will take about 30-40 minutes.
  2. Meanwhile, sprinkle salt and pepper to taste over the chicken. Add the sumac, turmeric, crushed garlic, and finally the 50 ml of oil. Massage the chicken until uniformly coated with the spices.
  3. Place the chicken in a baking tray and roast in the oven at 220°C (425°F) for 35-40 minutes.
  4. On a baking sheet lined with parchment paper, place the pita breads. Spread half of the caramelized onions on each pita. Place the roasted chicken on top, making sure to pour the pan juices over them (the juices will be absorbed into the pita). Sprinkle with pine nuts (or za'atar if unavailable). Bake for another 10 minutes.
  5. Serve hot, with the pita breads serving as plates. Eat with your hands.
