Recipe: Chocolate Covered Stuffed Dates

A little bit of everything. A little sweet, a little salty, some protein, some caffeine, some carbs. Great post workout.

20 dried dates (pitted)
peanut butter (natural 100%, unsweetened)
50g dark chocolate (60-80%)
1/2 tablespoon neutral-flavored oil
Maldon salt

How to prepare chocolate covered stuffed dates

  1. It's important to have quality dehydrated dates that aren't too dry, they should feel chewy and slightly soft. If you buy them pitted, they have a cut on the side. Through that cut, insert the peanut butter, as much as fits in each one (about 1/2 teaspoon).
    * if the peanut butter is cold, from the refrigerator, the filling process is easier
  2. Melt 35g of the chocolate for the glaze in a small bowl over steam. Remove the bowl from the steam. Add the rest of the chocolate and stir until completely melted. Add the oil and mix until smooth.
  3. Dip each stuffed date in the melted chocolate, so it's covered all over. Remove the date from the chocolate with a fork that you tap lightly on the edge of the bowl so the excess glaze drips through the fork tines.
  4. Place each glazed date on a platter lined with parchment paper. Put the platter in the refrigerator for 10-15 minutes, until the glaze starts to set, then sprinkle a little salt on each one. Let them set completely (it goes faster in the refrigerator), then you can move them to a box/bowl. They keep in the refrigerator from one day to the next.
