These cookies are soft on the inside with a thin, crispy crust on top. Similar to ladyfingers, but better, because they're homemade 😉
Make a double batch from the start, there will be a fight over them. I made a batch the day before yesterday and barely got to taste a few, and yesterday there was a request for a double batch. And it still wasn't enough...
Ingredients
100g butter
150g sugar
1 egg
1 vanilla extract (or 1 teaspoon homemade vanilla)
1 pinch of salt
1 teaspoon baking powder
200g flour
2 tablespoons powdered sugar
1 teaspoon cinnamon

How to prepare cinnamon cookies
- Using a mixer, cream the butter with sugar for about 1 minute.
- Add the egg and vanilla and mix until well combined.
- Add the flour, in which you've previously mixed the salt and baking powder, and mix until the dough comes together, about 30 seconds.
- Mix the powdered sugar with cinnamon in a plate.
- Prepare the baking tray with parchment paper. Take spoonfuls of the cookie dough and form balls (the dough isn't very sticky, balls form easily). Roll the balls through the powdered sugar and cinnamon mixture, shake off the excess gently (hold them in the palm of your hand and shake like you're shaking dice in backgammon 😋 that's the only dice game that came to mind) and place them on the baking tray spaced apart from each other (I put 16 on my oven tray).
- Press each ball with the bottom of a glass to flatten slightly. Don't press too hard, look through the bottom of the glass and stop when the edges start to crack slightly. (see photos)
- Bake in a preheated oven at 190°C (375°F) for 8-9 minutes. The cookies should be soft when you take them out and must not be allowed to brown.
* Don't be misled by the brownish color on the cookies, they're not browned, it's just the crust colored by the cinnamon - Let them cool. When cold, they should be soft in the center like ladyfingers and only have a crispy crust on top. Store in a bag for up to a week.
