Recipe: Mexican Salad

Look at those wonderful colors! It looks like a fruit salad.

Ingredients

1 good handful lettuce
1 small can corn (170g; about 4-5 tablespoons)
1/2 can beans (400g can; about 3 tablespoons)
1/2 long cucumber (or 4 small cucumbers; fresh)
2 roasted peppers
1-2 tomatoes (or a few cherry tomatoes)
1 avocado

Dressing

3 tablespoons oil
1 tablespoon lime juice
1 level teaspoon Mexican seasoning
1 tablespoon very finely chopped red onion
salt to taste

Servings: 2-3 (as a main dish); 4-6 (as an appetizer)

How to prepare mexican salad

  1. Cut the lettuce leaves (dry!) into small pieces. Dice the avocado, cucumber, roasted peppers and tomatoes.
  2. Put all the salad ingredients in a bowl.
  3. Mix the dressing ingredients well. Pour over the salad.
    * if you don't have Mexican seasoning, substitute with 1/4 teaspoon ground chili and 1 crushed garlic clove
  4. Mix everything together (best done by hand, so the vegetables keep their shape).
  5. Serve in fried tortilla "bowls" or in regular bowls with crushed tortilla chips on top.
