Look at those wonderful colors! It looks like a fruit salad.
Ingredients
1 good handful lettuce
1 small can corn (170g; about 4-5 tablespoons)
1/2 can beans (400g can; about 3 tablespoons)
1/2 long cucumber (or 4 small cucumbers; fresh)
2 roasted peppers
1-2 tomatoes (or a few cherry tomatoes)
1 avocado
Dressing
3 tablespoons oil
1 tablespoon lime juice
1 level teaspoon Mexican seasoning
1 tablespoon very finely chopped red onion
salt to taste
Servings: 2-3 (as a main dish); 4-6 (as an appetizer)
How to prepare mexican salad
- Cut the lettuce leaves (dry!) into small pieces. Dice the avocado, cucumber, roasted peppers and tomatoes.
- Put all the salad ingredients in a bowl.
- Mix the dressing ingredients well. Pour over the salad.
* if you don't have Mexican seasoning, substitute with 1/4 teaspoon ground chili and 1 crushed garlic clove - Mix everything together (best done by hand, so the vegetables keep their shape).
- Serve in fried tortilla "bowls" or in regular bowls with crushed tortilla chips on top.
