Recipe: White Radish Salad

Last night I made some chicken fingers with rosti, but the real star of the dinner was the radish salad. Not just because it's delicious, the truth is I've been craving something raw and fresh lately.

Ingredients

1 white radish (about 300g)
2 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon ground black pepper
2 tablespoons sour cream
2 tablespoons yogurt
1 small clove garlic (or 2 teaspoons garlic mayonnaise)

Servings: 2-3

How to prepare white radish salad

  1. Grate the radish using a coarse grater.
  2. Mix the vinegar with salt, sugar and pepper, and stir until the sugar and salt are dissolved. Pour this mixture over the radish. Let it marinate for 30 minutes.
  3. Drain the liquid released by the radish, pressing gently.
  4. Add the sour cream, yogurt (you can use just sour cream or yogurt if you prefer) and crushed garlic (or garlic mayonnaise; with mayonnaise, the garlic flavor will be more subtle and I recommend this version when you have mayonnaise available). Mix well.
