This is a healthier version of deep-fried French fries. They taste like fried potatoes and look like them, but they're made in the oven.
Ingredients
4-5 potatoes (starchy or medium-starchy)
3 tablespoons oil
salt, oregano
How to prepare healthy oven-baked fries
- Peel the potatoes and cut them into sticks, like straw potatoes, but not too thin.
- Put them in salted boiling water and cook only until they are almost done (edible but not falling apart easily; about 10 minutes).
- Drain in a colander and let them sit for 2-3 minutes for the water to evaporate. Sprinkle with salt and a little oregano. Pour the oil over them and mix gently, so they don't break.
- Arrange the potatoes in a baking tray in a single layer.
- Bake at 220°C (425°F) for about 25-30 minutes, until golden in spots, stirring 2-3 times during this time (after 15 minutes when they are slightly dry on top and towards the end). The potatoes should be golden in spots and have a crispy crust. Leave them in the oven until they look like this, even if a slightly longer time than indicated is needed (depends on the potatoes, their thickness, and your oven).
