Super thin and crispy! These can't get any thinner. When you crave homemade chips, this is a quick option. The potatoes turn out super crispy and stay that way even after cooling. I seasoned them with oregano, which gives them a touch of freshness.

How to prepare shoestring fries
- Slice the potatoes into thin, semi-transparent slices, like for chips, using a mandoline.
- Stack the slices on top of each other and cut into extra-thin sticks with a knife.
- Spread the sticks on paper towels to absorb moisture.
- Pour oil at least 3 fingers deep into a cast iron pot and heat it very well.
- Fry the potato sticks in batches in the hot oil, only until they become slightly cream-colored (don't let them turn golden). It takes about 15-20 seconds per batch.
- Remove the potatoes with a slotted spoon onto paper towels to drain the oil.
- At the end, season the potatoes with a little salt, freshly ground black pepper, and oregano. Mix gently by hand and shape into a nest. Serve immediately, although they won't get soggy even if they cool down.
