Marinated Tuna with 7 Spices
Ingredients
1 small tuna fillet (approximately 250g)
coarse salt
Oil Infused with 7 Spices
1/2 tablespoon black peppercorns
1/2 tablespoon coriander seeds
1/2 tablespoon mustard seeds
10 green cardamom pods
10 cloves
1/4 teaspoon chili flakes
5g smoked salt
120 ml olive oil
How to prepare marinated tuna with 7 spices
- Crush the peppercorns and coriander seeds in a mortar, but keep them coarse, don't turn them into powder. Mix with the rest of the spices (remove the seeds from the cardamom pods) and put them in a pan. Toast over low heat for a few minutes until fragrant.
- Remove the pan from heat and add the oil. Mix and let it infuse for several hours (about 4, but taste the oil). Strain the oil, but if desired, put back 1 heaping teaspoon of the spices. Discard the rest.
- Sprinkle the tuna generously with coarse salt on both sides, then refrigerate for one hour. Rinse the salt off the tuna, then pat dry thoroughly with paper towels.
- Slice the tuna thinly, arrange on a platter and pour the oil over the slices. Let it marinate for one hour. It can stay in the refrigerator for several more hours, but it's best to consume it on the day of preparation.
- Serve as an appetizer with toasted baguette slices.
