Recipe: Rice Salad with Orange Ginger Dressing

A salad I usually make to recycle leftovers from previous meals. Sometimes I have leftover sesame rice and a teriyaki drumstick, other times plain boiled rice and ginger carrot salad, other times sesame rice and steamed broccoli. Then I put them all together, prepare a fresh orange ginger dressing, and the result is more than satisfying both visually and in terms of taste.

Ingredients

125 g long grain rice
100 g frozen peas
1/2 small broccoli head
1 carrot
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
100 g tofu
teriyaki drumsticks (optional)

Dressing

50 ml orange juice (from 1/2 orange)
3-4 teaspoons rice vinegar
1 teaspoon grated ginger paste
1 heaping teaspoon sugar (or neutral-tasting honey)
1/4 teaspoon sesame oil
2 tablespoons oil

Servings: 2

How to prepare rice salad with orange ginger dressing

  1. Prepare the dressing: put everything in a small jar and shake well. Let it macerate.
  2. Cook the rice in salted water according to package instructions. In the last minute of cooking, add the peas. Steam the broccoli separated into florets.
  3. Grate the carrot and knead with a little salt until you feel it getting moist (about 1 minute). Toast the sesame seeds in a dry pan without any fat. Grate the tofu or crumble it with a fork.
  4. Drain the rice and peas well and place in a bowl. Chop the broccoli very finely and add over the rice. Let everything cool.
  5. Add the carrot, sesame seeds, and tofu over the rice. Mix gently and add salt to taste.
    * if you have leftover teriyaki drumsticks from a previous meal, you can tear them into strips and add them to the salad.
  6. Strain the dressing to separate the ginger pulp. If you want to serve the salad immediately, pour all the dressing and mix. Otherwise, pour only half the dressing, and add the rest just before serving.
