Recipe: Biscuit and Walnut Cubes

A dessert so simple to make, but which caused a sensation among my friends. I should have expected it - it tastes like a cross between homemade chocolate and biscuit salami. I find them especially good with coffee.

Ingredients

225 g plain biscuits (petit beurre or butter biscuits)
225 g walnuts (or a mix of hazelnuts and almonds)
225 g butter
125 ml water
200 g sugar (can be brown)
200 g dark chocolate (50% cocoa)
1 tablespoon rum
1 teaspoon vanilla extract
1 tablespoon oil (neutral flavored)

How to prepare biscuit and walnut cubes

  1. Melt 100 g of chocolate over a double boiler.
  2. Crush the biscuits finely (I ground them in a food processor). Grind the walnuts. Mix well.
  3. In a small saucepan, combine the water and sugar. Until the sugar is completely dissolved, keep the heat low so it doesn't boil, then you can increase it slightly. After the syrup starts to boil, let it cook for 3 minutes.
  4. Remove the saucepan from heat and add the butter cut into pieces. Stir until the butter is completely melted. Add the vanilla.
  5. Pour the syrup over the biscuit and walnut mixture. Stir.
  6. Divide the mixture into two equal parts. Into one part, pour the melted chocolate and rum and mix quickly until homogeneous.
  7. Let both mixtures cool slightly (about 5 minutes).
  8. In a 20 x 20 cm square pan (lined with parchment paper), place the chocolate mixture. Level it well with the back of a spoon.
  9. Place the plain mixture on top. Level it well too.
  10. Melt the remaining 100 g of chocolate over a double boiler. Add the oil and mix until smooth.
  11. Pour the chocolate glaze over the dessert. Shake the pan slightly to let the glaze self-level. Cover the dish with plastic wrap and refrigerate for several hours (or even better, overnight).
  12. Cut into bars or cubes. If desired, you can sprinkle some cocoa powder on top. Store the dessert in the refrigerator, otherwise it will soften. If you can't cut it perfectly, let it sit at room temperature for 5-10 minutes and then it will cut easily.
