Recipe: Roasted Paprika Parsley Potatoes

My everyday potatoes. I can't give them up even during the holidays. Because I love them too much, for Christmas I suggest preparing them roasted with paprika and parsley. They go well alongside pork roast or smoked ribs. The special flavor comes from the paprika which lightly toasts, developing intense, deep, roasted and slightly smoky aromas. Since it's the main ingredient, be careful to use quality paprika, real paprika, not "brick powder" 😋 as I call the inferior paprika that gives no taste to dishes and sometimes not even a nice color.

You can easily double the recipe and bake them in a larger oven tray if you have many guests at the table.

Ingredients

850 g potatoes
1/2 tablespoon sweet paprika
1/4 teaspoon chili (or hot paprika)
1/8 teaspoon black pepper
1/2 teaspoon salt
3-4 garlic cloves
1/2 bunch parsley
4 tablespoons oil (or rendered duck fat)
1/2 tablespoon butter

How to prepare roasted paprika parsley potatoes

  1. Peel the potatoes and cut into lengthwise wedges (4 or 6 pieces, depending on potato size). Sprinkle with salt, pepper, paprika, chili and mix. Add 3 tablespoons oil and the finely chopped parsley and mix to distribute the seasonings evenly.
  2. Arrange everything in a baking pan (large enough that the potatoes fit snugly; this way they will steam each other during roasting and the paprika won't burn; I used a 25 x 35 cm pan).
  3. Bake at 200°C for 15 minutes.
  4. Crush the garlic and mix it with 1 tablespoon of oil. Add over the potatoes. Gently mix. Return the pan to the oven. After 15 minutes, gently mix again. Bake until done (another 5-10 minutes).
  5. Add the butter cut into flakes over the potatoes and gently mix, being careful not to crush them. Serve immediately.
